Water suppliers take a risk based approach to enforcement. Although a site specific risk assessment will always be required to establish the risk associated with a particular Bain Marie in general:-

  • If a Bain Marie is be used solely to keep food warm and emptied and cleaned between usage then it may be considered a FC3 risk
  • If a Bain Marie is used to cook food it will be considered a FC5 risk
  • The outlet from a Bain Marie should be connected to drain either via an air break to drain arrangement conforming to EN 1717 or a Type AA or AB air gap.
